Food Service Managers are faced with a variety of menu planning standards and guidelines. The recommended optimal menu structure differs according to the setting, accreditation standards, the size of the facility, government requirements and client preferences. Facilities which incorporate an acute care hospital, aged care beds and who also provide Meals on Wheels meals are faced with the potential need to provide differing items in each setting.   Anne Schneyder will outline the various menu planning guidelines in the acute and residential care settings and will provide an overview of the Dietitians Association of Australia’s scoping project for menu planning standards in aged care.

Common hospitality-type concerns raised with ARAS will be highlighted and information provided about what ARAS advocates as good practice in dealing with residents’ concerns. Marilyn will discuss the work of the Aged Rights Advocacy Service, which deals with around 650 complainants each year about the quality of care and services in aged care facilities across South Australia.

Speaker: Nancy Morelli SA State Manager, Aged Care Standards and Accreditation Agency


Nancy will include in her presentation key areas of mutual interest for hospitality services in the Aged Care sector in regards to the accreditation process. When we talk about the 44 standards we automatically think about standard 4.8, however the presentation will also focus on various standards that affect the management of hotel services and will include information on continuous improvement, education and staff development, human resources management, nutrition and hydration, privacy and dignity, choice and decision making, infection control to name just a few of the standards that hotel services are involved in.
